Quick pork stew

1 tbsp oil
1 pork fillet, cut into cubes, approx 450g
1 onion, diced
1 red pepper, diced
75g Love Life Buckwheat (selected stores)
600ml chicken stock
1 tsp wholegrain mustard
1 courgette, diced
1. Heat the oil in a frying pan and fry the pork to brown. Add the onion and pepper and fry for 2-3 minutes. Stir in the buckwheat, stock and mustard, cover and simmer gently for 15 minutes.
2. Stir in the courgettes and cook for a further 5 minutes. Season to taste.
