    Quick barbecue ratatouille

    • Vegetarian
    • Preparation time: 10 minutes to 15 minutes
    • Cooking time: 30 minutes
    • Total time: 40 minutes to 45 minutes 45 minutes

    Serves: 4


    • 1 Large aubergine, cut into chunks
    • 1 Red onion, thinly sliced
    • 2 Courgettes, cut into rounds
    • 2 Orange or yellow peppers, cut into strips
    • 2 Large vine tomatoes, chopped
    • 2 tbsp Olive oil
    • 1 Crushed garlic clove
    • A Scattering, torn basil leaves


    1. Place the aubergine on a large strip of double thickness kitchen foil with the red onion, courgettes and peppers. Top with the tomatoes
    2. Mix the olive oil with the garlic and then season and drizzle over the vegetables.
    3. Fold up the sides of the foil to make a parcel and seal well, then cook on a hot barbecue for 30 minutes, turning halfway. Unwrap and scatter with torn basil leaves
