    Quick Lemon or Lime Butter

    Serves: 2


    • 50g butter
    • 2 tbsp lemon or lime juice
    • 1 tbsp hot water
    • 1 tbsp single cream or fromage frais
    • Pepper
    • Lemon or lime zest


    1. Melt 50g butter in a frying pan, then whisk in 2 tablespoons lemon or lime juice, 1 tablespoon hot water and, if you like, 1 tablespoon single cream or fromage frais. Season with pepper and garnish with fine strips of unwaxed lemon or lime zest. Pour over cooked fish, chicken or vegetables, such as broccoli.
