    Quick Linguine

    This is the perfect meal to make when supper needs to be on the table in double quick time. As most of the ingredients can be kept in the store cupboard or freezer, the whole dish can be cooked and ready in under 30 minutes

    • Cooking time: 15 minutes
    • Total time: 25 minutes 25 minutes

    Serves: 4

    Ingredients

    • 300g Giuseppe Cocco Linguine Pasta
    • 225g Frozen Waitrose Broccoli Florets
    • 125g Frozen Waitrose Garden Peas
    • 225g lean back bacon, trimmed of fat and chopped into small pieces
    • 2 slices day-old wholemeal bread
    • 2 tbsp Bart Spices Basil in Sunflower Oil
    • 1 tsp Bart Spices Garlic in Sunflower Oil

    Method

    1. Bring a large pan of water to the boil. Add the pasta and allow the water to return to the boil, then cook for 5 minutes. Add the broccoli and peas, bring back to the boil and cook for a further 5 minutes until the pasta is just tender.
    2. While the pasta is cooking, fry the bacon in a non-stick frying pan over a moderate heat for 2-3 minutes, until the fat begins to run. Make the breadcrumbs using a blender or food processor, or cut into small cubes. Add the breadcrumbs to the bacon and continue to fry for 2 minutes until both are golden and crispy.
    3. Drain the pasta and vegetables, place on a serving dish and mix in the basil and garlic. Stir in the bacon and breadcrumbs and serve immediately with a simple salad of cherry tomatoes and diced cucumber.

    Cook's tips

    If the broccoli florets are large, cut them into smaller, even-sized pieces.

    Variation

    Stir in 25-50g Waitrose Grated Mozzarella with the bacon and crumb mixture just before serving.
