    Quick Pea and Crème Fraîche Soup

    This fresh and vibrant soup is great paired with crunchy feta and pesto toasts.

    Serves: 4

    Ingredients

    • 1 tbsp olive oil
    • 1 onion, roughly chopped
    • 2 cloves garlic, roughly chopped
    • 907g pack frozen peas
    • 2 x 500ml Waitrose Cooks' Ingredients A Measure Of Vegetable or Chicken Stock
    • 4 tbsp half-fat crème fraîche
    • 8 slices white bloomer
    • 200g feta, crumbled into small pieces
    • 2 tbsp Waitrose Italian Green Pesto

    Method

    1. Heat the oil in a large pan and cook the onion and garlic for 5 minutes until softened.
    2. Add the peas and stock, and bring to the boil. Simmer for 5 minutes until the peas are tender.
    3. Remove the soup from the heat, then roughly blitz using a hand-held blender or liquidiser until coarsely puréed. Stir in the crème fraîchee and season.
    4. For the feta toasts, grill one side of the bread slices. Turn the toast over and scatter the crumbled feta onto the uncooked side. Dot with the pesto and pop back under the grill for about 3 minutes or until the feta begins to turn golden. Serve immediately with the soup.
