    Quinoa salad

    Quinoa is becoming a very fashionable ingredient – but it’s also very easy and quick to cook, a source of protein and, like couscous, takes on flavours easily.

    • Preparation time: 15 minutes
    • Cooking time: 20 minutes
    • Total time: 35 minutes 35 minutes

    Serves: 4

    Ingredients

    • 150g Quinoa, rinsed
    • 200g Helda beans, trimmed, cut into 5cm lengths
    • 1 Lemon, juice
    • 4 tbsp Extra virgin olive oil
    • 20g Parsley, leaves only
    • 2 Cucumbers, halved lengthways, cut into diagonal slices
    • 1 Green pepper, deseeded, cut into strips
    • 1 Spanish onion, sliced
    • 280g Tuna with sun-dried tomato and chilli, drained, flaked
    • 1tsp Crushed sumac

    Method

    1. Put the quinoa in a pan with 450ml water and bring to the boil. Lower the heat; cover and simmer until the water is absorbed (about 15 minutes).
    2. Boil the beans in water for 4 minutes, then drain.
    3. Mix the quinoa with 2 tbsp lemon juice, 3 tbsp oil and the parsley; season. Add the remaining ingredients and divide the salad between 4 plates.
