    Rachel Allen's apple rum cocktail

    A wonderfully warming alcoholic punch

    • Vegetarian
    • Preparation time: 5 minutes
    • Cooking time: 5 minutes
    • Total time: 10 minutes 10 minutes

    Serves: 8

    Ingredients

    • 1.5 litres pressed apple juice
    • 2.5cm fresh root ginger, peeled, finely grated
    • 2½ tbsp brown sugar
    • 225ml rum
    • ½ apple, sliced into thin wedges

    Method

    1. Put the apple juice, ginger, sugar and rum in a pan; heat until barely simmering. Serve warm, garnished with apple slices.
