    Radish and Coriander Salad

    Add even more colour to the table with this fresh salad with a tangy lime dressing.

    Serves: 8

    Ingredients

    • 6 Little Gem lettuces
    • 1 pack Waitrose French Breakfast Radish
    • 2 limes, cut into quarters
    • 20g pack fresh coriander, roughly chopped
    • 5 tbsp extra virgin olive oil
    • A pinch of caster sugar

    Method

    1. Trim the base from the Little Gem hearts and halve them lengthways. Arrange on a platter or in a large salad bowl. Top and tail the radishes, slice them and place in a small bowl, then set aside.
    2. Take 2 of the lime quarters and, using a sharp knife, cut the flesh away from the skin. Discard the skin and roughly chop the flesh. Squeeze the juice from the remaining quarters and mix the flesh and juice with the radishes. Add the coriander, olive oil and sugar, and mix the dressing well. Season to taste.
    3. Pour over the lettuce and, if using a salad bowl, toss to combine. Serve immediately. Cook's Tip Prepare to the end of paragraph 2 of instructions and transport to the party. Dress the salad just before serving.
