    Raspberry Mojito

    Ingredients

    12 fresh mint leaves

    2 tbsp lime juice

    1 tsp caster sugar

    100ml Havana Club Anejo Especial Rum

    50g fresh raspberries, crushed

    essential Waitrose Club Soda

    Sprig of mint, to garnish

    Method

    1. Lightly middle the mint leaves, lime juice and sugar at the bottom of a tall glass. Add crushed iced to half fill the glass, then pour over the rum and crushed raspberries. Stir lightly and top with soda. Garnish with the mint sprig.
