    Raspberry, Lime and Barley Water

    A shiny new version of barley water, and very refreshing it is too. Also makes a great base for vodka cocktails

    • Preparation time: 10 minutes, plus 1 hour cooling time
    • Cooking time: 8 minutes
    • Total time: 18 minutes, plus 1 hour cooling time 20 minutes

    Serves: 18

    Ingredients

    • 500g Granulated sugar
    • 60g Pearl barley, rinsed and drained
    • 225g Raspberries
    • 150ml Lime juice (from about 6 limes)
    • Sparkling water
    • Mint sprigs
    • Sliced limes and ice cubes

    Method

    1. Put the sugar and 750ml water in a large pan and bring to the boil slowly, stirring now and then until the sugar dissolves.
    2. Simmer briskly for 5 minutes, add the barley and take from the heat.
    3. Tie most of the raspberries in a 15cm x 15cm muslin cloth and add to the saucepan. Leave to infuse for 1 hour, then remove and discard.
    4. Mix in the lime juice and pour into a sterilised bottle.
    5. Use right away or keep in a fridge for up to 6 days. Dilute with sparkling water and serve with mint, lime slices, raspberries and ice.
