    Raspberry and Chilli Vinegar

    This is a real lip-smacking, thick, fruity vinegar and a far cry from the very acidic mass-produced stuff. It makes the most amazing dressing for peppery salad leaves to accompany a shredded crispy duck salad. The chilli flakes add a little extra kick, but the vinegar is equally irresistible without them.

    • Preparation time: 10 minutes, plus cooling
    • Total time: 10 minutes, plus cooling 10 minutes

    Makes: 1 litre

    Ingredients

    • 600ml white wine vinegar
    • 1-2 tsp dried chilli flakes
    • 100g caster sugar
    • 750g raspberries

    Method

    1. Place all of the ingredients together in a saucepan and heat gently until the sugar has dissolved. Simmer gently for 2-3 minutes, to give the chilli time to infuse, then remove from the heat. Leave the mixture to cool. Pour through a sieve lined with muslin or a clean J-cloth and store in sterilised bottles.
