    Real Baked Beans

    • Preparation time: 5 minutes, plus overnight soaking
    • Cooking time: 90 minutes
    • Total time: 12 minutes 15 minutes

    Serves: 4 - 6

    Ingredients

    • 500g dried haricot beans, soaked overnight in cold water
    • 1 tbsp butter
    • 1 medium onion, chopped
    • 1 apple, peeled, cored and finely chopped
    • 120g piece of smoked ham or bacon (optional)
    • 400g tin chopped tomatoes
    • 2 tbsp molasses or molasses sugar
    • Salt

    Method

    1. Drain and rinse the beans, then put in a pan, cover with fresh, cold water, bring to the boil and simmer for an hour. Drain and set aside.
    2. Heat the butter in a heavy-bottomed saucepan or casserole dish and add the onion and the apple, and bacon (if using). Gently fry until soft, then add the beans, tomatoes and molasses. Cook with the lid on for 20 minutes. Add a little water if it becomes dry. Remove the bacon, taste, and add salt if necessary.
