    Red Cabbage with Horseradish

    Brilliant look, brilliant taste

    Serves: 8

    Ingredients

    • 1 tablespoon creamed horseradish
    • 1 onion
    • 1 tablespoon olive oil
    • 1 lemon, juiced and zested
    • 900g red cabbage

    Method

    1. Add 900g red cabbage, finely shredded, to a large pan of boiling water with a squeeze of lemon juice.
    2. Cover briefly to return to the boil, then remove the lid, reduce the heat and simmer for 6-7 minutes; drain.
    3. Stir in 1 tbsp olive oil, a finely chopped onion, the finely grated zest and juice of 1 lemon and 1 tbsp creamed horseradish.
    4. Season to taste and serve immediately.
