    Red Fruit Gratinee

    • Preparation time: 12 minutes
    • Cooking time: 10 minutes
    • Total time: 22 minutes 25 minutes

    Serves: 4


    • 450g mixed red berries, such as raspberries and strawberries
    • 100g caster sugar
    • 3 large egg yolks
    • 75ml double cream


    1. Preheat the grill to high. Prepare the fruit, removing stalks, washing it if necessary, and patting dry. Cut into evenly sized pieces. Arrange the fruit in individual, flameproof gratin dishes (or you could use one large, flat dish).
    2. Put the sugar and egg yolks in a bowl and beat with an electric whisk for 3-4 minutes until pale and thick. Add the cream and beat for another 2 minutes until the mixture thickens slightly. Pour this sabayon mixture over the fruit and grill (you may have to do this in two batches) for about 5 minutes, until golden. Serve immediately.
