    Red Monkfish Curry with Sesame Fried Noodles

    Serves: 2

    Ingredients

    • A little oil
    • 250g sliced monkfish
    • ½ yellow or red pepper
    • 100g sugar snap peas
    • 350g jar Loyd Grossman Red Thai Curry Sauce
    • Noodles
    • 1 tbsp sesame seed oil

    Method

    1. Heat a little oil and stir-fry 250g sliced monkfish with ½ yellow or red pepper, thinly sliced, and 100g sugar snap peas for 2-3 minutes.
    2. Add a 350g jar Loyd Grossman Red Thai Curry Sauce and simmer for 5 minutes until the fish is cooked. Cook some noodles of your choice and drain well.
    3. Heat a frying pan or wok, add 1 tbsp sesame seed oil, then add the noodles and stir-fry them for 1-2 minutes or until they are piping hot. Serve them with the monkfish curry.
