    Red Wine Figs with Caramel Yoghurt

    • Total time: 1 hour 60 minutes

    • 300g thick natural Greek yoghurt
    • 3 tbsp soft light or darkbrown sugar
    • 1 orange
    • 500ml light red wine
    • 3 tbsp honey
    • 100ml orange juice
    • 500g large dried figs


    1. Place the yoghurt in a shallow bowl and stir. Sprinkle the whole surface with the sugar, cover with plastic film, and refrigerate.
    2. Trim off the top and bottom of the orange, and cut the peel from the sides, leaving behind as much pith as possible. Cut the peel into finger-long sections, then cut each finger-length into thin matchsticks. Alternatively, use a zester to peel off the zest in strips.
    3. Heat the red wine, honey, orange juice and orange rind in a saucepan, stirring. Make a couple of cuts in the side of each fig, then add to the wine mixture in the pan.
    4. Simmer gently for 45 minutes, until the liquid has thickened but is not too gloopy, and the figs and orange rind have softened. If there is still a lot of liquid, remove the figs and boil the liquid for 5-10 minutes until thick and syrupy, then pour over the figs. Beat the sugar into the yoghurt with a wooden spoon, and serve with the figs, warm or at room temperature.
