    Rhubarb and Apple Crumble with Walnuts

    • Preparation time: 20 minutes
    • Cooking time: 35 minutes to 40 minutes
    • Total time: 1 hours


    40g Walnuts, roughly chopped
    30g Demerara sugar
    120g Unsalted butter
    180g Plain flour
    4 tbsp Apple juice
    65g Vanilla or caster sugar
    2 Bramley apples, peeled, cored and cut into wedges
    400g Rhubarb, cut into 5cm pieces


    1. Arrange the rhubarb and apples in the bottom of individual ovenproof dishes. Scatter over the sugar and sprinkle on the apple juice (or you can use 4 tbsp water).
    2. Rub together the plain flour and butter until it resembles coarse breadcrumbs. Stir in the demerara sugar, walnuts and a pinch of salt. Sprinkle over the top and bake at 180C/gas 4 for 35–40 minutes, until golden.
