    Rhubarb compote with yogurt and muesli

    Serves: 2


    • 3 large sticks rhubarb, about 250g
    • juice of ½ orange
    • 1 tbsp light muscovado sugar
    • 200 g natural yogurt
    • ½ tsp Taylor & Colledge Vanilla Bean Paste
    • 1 tbsp Waitrose Pure Clear Honey
    • 50g muesli (such as Dorset Cereals Super High Fibre)


    1. Preheat the oven to 220 C, gas mark 7.
    2. Cut the rhubarb into 1 cm lengths and place in a small ovenproof dish with the sugar and orange juice.
    3. Stir together the yogurt, vanilla and honey until evenly mixed.
    4. Spoon the rhubarb into a bowl, pour over the yogurt then sprinkle with muesli.
