    Ribeye Steaks in Thai Marinade

    • Preparation time: 15 minutes, plus 4-6 hours marinating
    • Cooking time: 6 minutes to 8 minutes
    • Total time: 21- 23 minutes, plus 4-6 hours marinating

    Serves: 8

    Ingredients

    • 6 x 250-300g ribeye steaks
    • Salt and freshly ground pepper
    • Marinade
    • 5cm piece fresh ginger, peeled and chopped
    • 2 fresh red chillies (or to taste) deseeded
    • 1 stick lemon grass, finely chopped
    • 1 lime, juiced
    • 2 tbsp chopped fresh coriander
    • 1 tsp soy sauce
    • ½ tsp Thai fish sauce
    • 2 tbsp vegetable oil

    Method

    1. Combine all the marinade ingredients. Lay the steaks in a large, shallow dish and cover with marinade. Leave for 4-6 hours in the fridge.
    2. Shake off any excess marinade, season well with salt and pepper, and barbecue for 3-4 minutes each side for medium rare, or longer to taste. Serve immediately.
