    Rich Chocolate Tart

Like a chocolate custard tart, this dessert will appeal to all chocoholics. Even the crumb base is made from chocolate biscuits although you could make it with plain digestives if preferred.

    • Preparation time: 15 minutes
    • Cooking time: 30 minutes
    • Total time: 45 minutes 45 minutes

    Serves: 6 - 8

    • ½ x 400g pack Waitrose Plain Chocolate Digestives, crushed
    • 50g butter, melted
    • 1 x 284ml pot Waitrose Double Cream
    • 1 x 200g bar Waitrose Continental Plain Chocolate, chopped
    • 2 medium eggs
    • 75ml milk
    • Extra chocolate and whipping cream for decoration

    1. Mix the biscuits with the butter and press into the base and sides of a loose-bottomed 20cm tin.
    2. Gently bring the cream to the boil and pour over the chocolate, stirring until melted. Beat the eggs and milk together and then stir into the chocolate mixture.
    3. Pour into the biscuit base and place in a preheated oven 170ºC, gas mark 3, for 15-20 minutes or until just set. Allow the tart to cool.
    4. Meanwhile, melt the extra chocolate and then pour onto a clean, cold surface (ideally marble). Spread thinly using a palette knife.
    5. Leave to cool until just firm. Hold a sharp, long-bladed knife at a slight angle and draw across the chocolate to make long, thin scrolls for decorations.
