    Rich Port Gravy

    Nothing beats home-made gravy for bringing together all the flavours of the Christmas meal.

    Serves: 8


    • Juices from the roasting tin, with excess fat spooned off
    • 1 tbsp plain flour
    • 500ml hot turkey stock, with excess fat spooned off
    • 4 tbsp port
    • 2 tbsp redcurrant jelly


    1. While the turkey is resting, place the roasting tin with the turkey juices on the hob and, using a wooden spoon, stir in the flour, incorporating the sticky bits from the tin. Cook for 1-2 minutes then gradually pour in the hot stock while stirring.
    2. Bring to the boil on a medium heat, stirring constantly until the gravy thickens. Add the port and redcurrant jelly and stir until dissolved. Season to taste, pour into a warm jug and serve.

    Duchy Originals Organic Fresh Gravy can be used in place of home-made or, if you would like to make your own gravy but don't want to make the stock first, use 2 x 300g tubs Joubère Fresh Chicken Stock.
