    Roast cod with creamy kale & potatoes

    • Total time: 20 minutes

    Serves: 2

    Ingredients

    260g pack 2 Waitrose Skinless & Boneless Cod Fillets
    Large pinch dried chilli flakes
    300g baby new potatoes, sliced
    250g pack kale
    2 tsp wholegrain mustard
    150g half fat crème fraîche 

    Method

    1. Preheat the oven to 200°C, gas mark 6. Place the cod in a small roasting tin, season and sprinkle with the chilli flakes. Roast for 15 minutes.

    2. Meanwhile, cook the potatoes and kale in boiling water for 7 minutes or until the potatoes are tender then drain well.

    3. Add the mustard and crème fraîche to the pan and cook for 1 minute. Stir in the potatoes and kale, and heat through. Season to taste and serve topped with the roast cod.
