Roast Beef with a Salt and Pepper Crust

This Danish style roast, with a salt and pepper crust and sugared brown potatoes, adds an interesting twist to a popular dish. Serve with carrot batons with butter and chopped parsley.
The beef in this recipe should be served pink in the centre. If you would prefer it very well done, then increase the initial cooking time to 1 hour 30 minutes.
This recipe can be made using other roasting beef joints. Herbs could also be added to the salt and pepper.
