    Roast Beef with a Salt and Pepper Crust

    This Danish style roast, with a salt and pepper crust and sugared brown potatoes, adds an interesting twist to a popular dish. Serve with carrot batons with butter and chopped parsley.

    Serves: 6

    Ingredients

    • 1.25kg Waitrose Aberdeen Angus Top Rump Joint
    • 25g softened butter
    • 1tbsp whole black peppercorns
    • 2tsp coarse ground salt
    • For potatoes
    • 25g butter
    • 750g small potatoes, scrubbed
    • 1/2 tsp salt
    • 25g granulated sugar

    Method

    1. Cut a piece of cooking foil large enough to wrap around the joint. Remove the joint from the packaging and dry with kitchen paper.
    2. Spread the butter on the centre of the foil, place the joint on top and wrap in the foil. The butter should be on all the foil that is touching the joint.
    3. Place in a roasting tin and cook in a preheated oven 190°C, gas mark 5 for 1 hour 10 minutes.
    4. Roughly crush the peppercorns with a pestle in a mortar or in a processor. Remove the joint from the oven, drain off and reserve the juices for making gravy. Remove the foil. Increase oven temperature to 220°C, gas mark 7.
    5. Sprinkle the pepper and coarse salt over the surface of the joint. Return the roast to the oven for 10-15 minutes until browned.
    6. Meanwhile boil the potatoes with the remaining salt until just tender and drain. In a separate pan melt the sugar over a low heat until it begins to turn brown at the edges. Add the butter and stir until melted. Add to the potatoes and shake the pan to coat. Return to the heat for 10 minutes. Serve the roast beef with potatoes, gravy and carrot batons with butter and chopped parsley.

    Cook's tips

    The beef in this recipe should be served pink in the centre. If you would prefer it very well done, then increase the initial cooking time to 1 hour 30 minutes.

    Variation

    This recipe can be made using other roasting beef joints. Herbs could also be added to the salt and pepper.
