Roast fish with Mediterranean vegetables

Serves: 2
400g pack Waitrose Mediterranean roasting vegetables
240g pack essential Waitrose 2 frozen hake fillets, thawed
Olive oil spray
1 tsp chopped fresh rosemary
Lemon wedges, to serve
1. Place the vegetables on a baking sheet and roast at 200ÂșC, gas mark 6 for 20-25 minutes.
2. Sit the fish on top of the vegetables, then spray with oil and sprinkle with the rosemary.
3. Return to the oven for 15 minutes until cooked through. Serve with lemon wedges.

There is little difference nutritionally between frozen and fresh fish.
