    Roast Pears with Rosemary, Sauternes and Butter

    • Cooking time: 50 minutes
    • Total time: 1 hour 5 minutes 60 minutes 5 minutes

    Serves: 6

    Ingredients

    • 300ml Sauternes wine
    • 50g caster sugar
    • 30g butter, softened
    • 6 sprigs rosemary
    • 6 ripe pears

    Method

    1. Preheat the oven to 200°C, gas mark 6.
    2. Put the Sauternes, sugar, butter and rosemary in a wide, ovenproof casserole. Peel and halve each pear, putting them straight into the liquid in the dish, making sure each is coated in the liquid, to prevent them browning.
    3. Bring the liquid to the boil, then transfer the dish to the oven, leaving it uncovered, and bake for 45-50 minutes until the pears are tender, and caramelised in places.
    4. Serve warm with the buttery juices and lashings of cream.
