    Roast Pork with Pear Sauce

    Serves: 4

    Ingredients

    • 450g Waitrose Extra Lean Pork Leg Roast
    • 2tsp coarse sea salt
    • 1tsp vegetable oil
    • 1 medium onion, peeled and finely chopped
    • 4 large pears
    • 1 pack fresh sage
    • 1tsp salt

    Method

    1. Rub 1 x 450g Waitrose Extra Lean Pork Leg Roast with 2tsp coarse sea salt and place in a roasting tin. Place in a preheated oven 200°C, gas mark 6 for 40 minutes or until thoroughly cooked.
    2. To make the sauce, place 1tsp vegetable oil and 1 medium onion, peeled and finely chopped, in a heavy based pan and cook until the onion is soft but not brown.
    3. Add 4 large pears, peeled, cored and diced; 1 small pack of fresh sage, stalks removed and roughly chopped; 4tbs water and 1tsp salt and bring to the boil.
    4. Reduce the heat and simmer for 5 minutes until the pears soften but remain in pieces.
