    Roast Potatoes with Garlic, Lemon and Oregano

    • Preparation time: 20 minutes
    • Cooking time: 45 minutes
    • Total time: 1 hour 5 minutes 60 minutes 5 minutes

    Serves: 4 - 6

    Ingredients

    • 1.3kg floury potatoes, peeled and cut into large chunks
    • 100ml olive oil
    • 4 garlic cloves, crushed
    • 1 1/2 tsp dried oregano
    • Salt
    • Freshly ground black pepper
    • 200ml lamb or chicken stock
    • Juice of 1 lemon
    • 2-3 tbsp fresh chopped oregano

    Method

    1. Preheat the oven to 200°C/gas 6. Put the potatoes in a single layer in a large baking dish and pour over the oil. Add the garlic and dried oregano and season. Toss well to coat. Roast the potatoes for 15 minutes.
    2. Add the stock, toss and roast for 10 minutes more. Add the lemon juice, toss and cook for 15-20 minutes more, until the potatoes are done. Sprinkle with fresh oregano and serve.
