    Roast tomato, mascarpone & pesto pizza

    • Preparation time: 20 minutes to 25 minutes
    • Cooking time: 20 minutes
    • Total time: 40 minutes to 45 minutes 45 minutes

    Serves: 2

    Ingredients

    • 200g Cherry tomatoes
    • 1 tbsp Olive oil
    • 1 tbsp Pesto
    • 1 Waitrose Organic Italian Pizza Base
    • 3 tbsp Mascarpone
    • 1 tbsp Torn fresh basil

    Method

    1. Drizzle the tomatoes with the olive oil and roast them for 15-20 minutes at 190°C, gas mark 5.
    2. Spread the pest over a frozen Waitrose Organic Italian Pizza Base and spoon over the mascarpone.
    3. Arrange the tomatoes on top and scatter with fresh basil. Drizzle with olive oil and bake for 20 minutes.
