Roast veggie moussaka

350g essential Waitrose New Potatoes, cut into ½cm thick slices
1 tbsp essential Waitrose Vegetable Oil
750g bag frozen essential Waitrose Grilled Vegetable Mix
400g can essential Waitrose Chopped Tomatoes
250g essential Waitrose Greek Style Natural Yogurt
1 Waitrose Free Range Egg, beaten
50g essential Waitrose Cheddar, grated
1 Preheat the oven to 220°C, gas mark 7.
2 Cook the potatoes in boiling water for 8 - 10 minutes until just tender, then drain.
3 Meanwhile, heat the oil in a large frying pan and fry the vegetable mix for 5 minutes, add the tomatoes and cook for2 minutes. Transfer to a shallow ovenproof dish, top with a single layer of potatoes, then season.
4 Mix the yogurt, egg and seasoning together and spread on the potatoes. Sprinkle with cheese and bake for 15 - 20 minutes until golden.
