    Roast whiting with tomato relish

    • Total time: 30 minutes 30 minutes

    Serves: 4


    • 4 x 175g fillets whiting or haddock
    • 250g essential Waitrose cherry tomatoes, halved
    • 75g fresh breadcrumbs
    • 1 garlic clove, crushed
    • 1 lemon, grated zest
    • 2 tbsp chopped rosemary
    • 2 tbsp olive oil
    • 1 tsp essential Waitrose balsamic vinegar


    1. Preheat the oven to 220C, gas mark 7. Sit the fish, skin-side down, in a roasting tin. Surround with the tomatoes. Combine the breadcrumbs, garlic, lemon zest and rosemary; use to top the fish. Drizzle over the olive oil and roast for 10–12 minutes.
    2. Plate the fish, then add the vinegar to the tomatoes, stirring to combine with any breadcrumbs in the tin. Spoon over the fish to serve.
