Roasted drums with maple & pecans

900g pack chicken drumsticks, scored
600g pack Waitrose Vegetable Roasting Selection
1 tbsp olive oil
3 tbsp maple syrup
1 tbsp Cajun seasoning
1 tbsp fresh thyme leaves
1. Preheat the oven to 200°C, gas mark 6. Place the chicken, vegetable selection and pecans into a large roasting tin.
2. Combine the oil, maple syrup and Cajun seasoning, and toss with the chicken and vegetables. Roast for 30 minutes, or until golden and the chicken is cooked through with no pink meat.
3. Serve sprinkled with the thyme leaves.
