    Roasted Cod with Cherry Tomatoes

    Easy entertaining

    Serves: 4

    Ingredients

    • 4 x 175g Fresh Icelandic Prime Cod Fillets
    • 4 slices Waitrose Italian Dry-Cured Ham
    • 500g cherry tomatoes
    • 2 shallots
    • 5 thyme sprigs
    • 1 tbsp olive oil

    Method

    1. Preheat the oven to 190°C, gas mark 5. Season 4 x 175g Fresh Icelandic Prime Cod Fillets and wrap each with a slice of Waitrose Italian Dry-Cured Ham.
    2. Place 500g halved cherry tomatoes, 2 chopped shallots and the leaves from 5 thyme sprigs in a small roasting tin. Drizzle with 1 tbsp olive oil, season and mix lightly. Place the fish on top and bake for 20-25 minutes until the fish is firm and the tomatoes are tender. Serve with buttered new potatoes.
