    Roasted Figs with Vanilla Custard

    Serves: 6


    • 12 fresh figs
    • Honey
    • Cinnamon
    • Butter
    • 500g pot of Waitrose Fresh Vanilla Custard
    • Ginger biscuits


    1. Preheat the oven to 180°C, gas mark 4. Arrange a dozen fresh figs, standing upright, in a lightly buttered ovenproof dish. Lightly drizzle with honey, dust with cinnamon and roast for 15-20 minutes or until soft but not collapsed.
    2. In the meantime, heat through a 500g pot of Waitrose fresh vanilla custard in a thick bottomed saucepan. Remove the figs from the oven and pour enough custard over them to come halfway up their sides. Sprinkle the figs with finely crushed ginger biscuits (Anna's Ginger Thins are particularly good) and serve warm.
