    Roasted Green Chillies Stuffed with Paprika Chicken

    Makes: 16

    Ingredients

    • 8 fresh, whole green chillies
    • 1 Roast Chicken Breast Fillet (from the pre-packed deli section)
    • 75ml Greek yogurt
    • A squeeze of lime juice,
    • 1 tsp paprika

    Method

    1. Slice 8 fresh, whole green chillies in half lengthwise, remove the seeds and membranes and roast at 220°C, gas mark 7 for 12 minutes or until the skins start to brown. Set aside to cool. Meanwhile, finely shred 1 Roast Chicken Breast Fillet (from the pre-packed deli section).
    2. Mix with 75ml Greek yogurt, a squeeze of lime juice, 1 tsp paprika and seasoning to taste. Spoon this mixture into the cooled green chilli halves. Scatter with a little more paprika and serve cold or at room temperature.
