    Roasted Loin of Pork with Rosemary and Garlic

    Serves: 4 - 6

    Ingredients

    • 1 boneless loin of pork (about 1kg)
    • 100g pancetta, cubed
    • Olive oil
    • Zest of 2 lemons
    • 2 cloves garlic, sliced
    • 3 sprigs rosemary
    • 125ml red wine
    • Salt
    • Freshly ground black pepper

    Method

    1. Brown the pork and pancetta in the olive oil. Remove from pan and cover the pork in the lemon zest, garlic and rosemary. Season well.
    2. Place in a casserole dish and pour in the wine. Cover, and roast in a preheated oven (180°C/ gas mark 4) for 1 hour.
