    Roasted Parsnip and Pear

    Brilliant combination

    Serves: 8

    Ingredients

    • 800g parsnips, peeled and quartered lengthways
    • 3 pears, such as Conference, cored and cut into quarters
    • 3 tbsp olive oil
    • 2cm piece fresh root ginger

    Method

    1. Preheat the oven to 220°C, gas mark 7.
    2. In a large bowl, mix 800g parsnips, peeled and quartered lengthways, with 3 pears, such as Conference, cored and cut into quarters. Add 3 tbsp olive oil and 2cm piece fresh root ginger, finely grated, and toss well.
    3. Place on a large baking tray. Season well and roast for 50-60 minutes, shaking and turning halfway through. Serve immediately
