    Roasted Plum Tomatoes with Mozzarella

    Bring out the flavour of tomatoes by roasting them and adding a drizzle of Bertolli Novello.

    Ingredients

    • 250g pack Waitrose Baby Plum or Vine Red Choice Tomatoes
    • 125g pack Galbani Santa Lucia Mozzarella, sliced
    • ½ pack fresh basil, leaves roughly torn
    • 2-3 tbsp Bertolli Novello Extra Virgin Olive Oil
    • Salt
    • Freshly ground black pepper

    Method

    1. Preheat the oven to 200°C, gas mark 6. Wash the tomatoes and place in a small baking dish in a single layer. Cook in the oven for 10-15 minutes until the tomatoes have softened and burst their skins.
    2. Arrange the sliced mozzarella on a couple of serving plates and spoon the roasted tomatoes and their juices over. Scatter with torn basil and drizzle with the oil. Season to taste and serve with crusty Italian bread.

    Cook's tips

    To serve with pasta, dice the mozzarella and add to 200g freshly-cooked pasta with the roasted tomatoes and other ingredients. Toss and serve with grated Parmesan.
