    Roasted Plum Tomatoes with Mozzarella and Basil

    Bring out the flavour of tomatoes by roasting them and adding a drizzle of Bertolli Novello.

    • Preparation time: 10 minutes
    • Cooking time: 15 minutes
    • Total time: 25 minutes 25 minutes

    • 250g pack Waitrose Baby Plum or Vine Red Choice Tomatoes
    • 125g pack Galbani Santa Lucia Mozzarella, sliced
    • ½ pack fresh basil, leaves roughly torn
    • 2 - 3 tbsp Bertolli Novello Extra Virgin Olive Oil
    • Salt and freshly ground black pepper


    1. Preheat the oven to 200°C gas mark 6. Wash the tomatoes and place in a small baking dish in a single layer. Cook in the oven for 10-15 minutes until the tomatoes have softened and burst their skins.
    2. Arrange the sliced mozzarella on a couple of serving plates and spoon the roasted tomatoes and their juices over. Scatter with torn basil and drizzle with the oil. Season to taste and serve with crusty Italian bread.
