    Roasted Potato Cubes with Garlic and Rosemary

    Pop the roasted garlic cloves out of their skins for a sweet treat.

    • Total time: 45 minutes 45 minutes

    Serves: 2

    Ingredients

    • 1 large potato, such as Romano, about 300g, unpeeled
    • 6 large unpeeled cloves garlic
    • 2 tbsp olive oil
    • 1 sprig fresh rosemary, leaves only

    Method

    1. Preheat the oven to 200°C, gas mark 6. Cut the potato into 2cm cubes and place in a small roasting tin. Add the garlic cloves and olive oil, season well and toss to combine.
    2. Roast for 30 minutes, stirring the potatoes a few times during the cooking. Remove from the oven and add the rosemary. Stir to combine then place back in the oven for 10 minutes or until the potatoes are golden brown. Transfer to a warmed serving dish and serve.
