    Roasted Potatoes, Peppers and Chillies

    • Preparation time: 30 minutes to 40 minutes
    • Cooking time: 20 minutes to 25 minutes

    Serves: 4

    Ingredients

    • 750g potatoes
    • 4 red peppers
    • 2 fresh red chillies
    • 2-3 sprigs fresh oregano
    • Salt and pepper
    • 150ml Olive Oil

    Method

    1. Preheat the oven to 190°C/gas 5. Put the potatoes in cold salted water, bring to the boil and cook until parboiled - about 10 minutes. Drain, peel and cut into large chunks.
    2. Meanwhile, grill the peppers until the skin is black. Peel and cut away the seeds, then slice the peppers into large chunks. Chop the chillies, seeds and all.
    3. Splash a large roasting pan liberally with olive oil. Mix the potatoes, peppers and chopped chilli together in the pan. Anoint with more oil, sprinkle with oregano, salt and pepper. Roast for 20-25 minutes until the potatoes are beginning to brown. Serve hot with grilled or roasted chicken or fish.
