    Roasted Tofu with Spicy Relish

    Serves: 2 as a starter

    Ingredients

    • 1 1/2 tbsp olive oil
    • 349g pack of silken firm tofu
    • 250g diced fresh toamtoes
    • 100g diced cucumber
    • 1 red chilli
    • 2 tbsp sliced salad onion
    • 1/2 garlic clove
    • 1/2 tsp soft brown sugar
    • 1 tbsp lime juice
    • 2 tbsp chopped coriander
    • 1/2 tsp ground black pepper

    Method

    1. Preheat the oven to 230°C/gas 8. Pour 11/2 tbsp olive oil into a large, foil-lined roasting tin. Spread it out with a brush and put in the oven to heat. Add a 349g pack of silken firm tofu, cut into 2.5cm cubes, to the hot oil. Put on the top shelf of the oven and roast for 15-20 minutes or until crisp and golden brown.
    2. Meanwhile, make the relish by combining 250g diced fresh tomatoes; 100g diced cucumber; 1 red chilli, deseeded and sliced; 2 tbsp sliced salad onion; 1/2 garlic clove, crushed; 1/2 tsp soft brown sugar; 1 tbsp lime juice; 2 tbsp chopped coriander and 1/2 tsp ground black pepper. Put the roasted tofu in a serving dish and spoon over the relish.
