    Rocky Road

    This yummy no-bake treat makes a brilliant gift for mum.

    • Preparation time: 20 minutes, plus chilling time
    • Total time: 2 hours 20 minutes 60 minutes 60 minutes 20 minutes

    Makes: Makes 12 pieces


    • 100g Shortbread biscuits
    • 25g Cooks' Ingredients Mini Marshmallows
    • 25g Cooks' Ingredients Glacé Cherries, halved
    • 225g Cooks' Ingredients Milk Chocolate Chunks
    • 75g Butter


    1. Line the base and sides of a 19cm square baking tin with parchment. break the biscuits into pieces and mix together in a large bowl with the marshmallows and glacé cherries.
    2. Melt the chocolate and butter together in a heatproof bowl set over a pan of simmering water. Remove from the heat and leave to cool. Add the chocolate mixture to the other ingredients and mix well. Spoon into the tin and spread evenly. Cover and chill for 2 hours or until firm. Cut into 12 bars.
