    Root vegetable and apple roast

    Autumn flavours abound in this roast with sausages.

    Ingredients

    • a little chopped sage
    • 1 tbsp honey
    • 1 tbsp grainy mustard
    • slosh of olive oil
    • 8 pork and bramley apple sausages
    • 2 cored, sliced cox apples
    • 700g chunkily chopped root vegetables, such as parsnips and carrots

    Method

    1. Roast 700g chunkily chopped root vegetables, such as parsnips and carrots, at 200c, gas mark 6, with a slosh of olive oil.
    2. After 10 minutes, add 2 cored, sliced cox apples, 1 tbsp each grainy mustard and honey and a little chopped sage.
    3. Nestle in 8 pork and bramley apple sausages and continue roasting until all is cooked through.
