    Rose-Scented Mixed Berry Fool

    A rose-scented mixed berry fool, tumbled with loosely whipped cream, that will evoke memories of summer

    Ingredients

    • 300g frozen Shearway Summer Fruits, defrosted
    • 2 tbsp caster sugar
    • 1-2 drops Star Kay White Rose Water
    • 142ml pot double cream
    • Crystallised rose petals, to decorate (optional)

    Method

    1. Place the fruit in a pan with the sugar and heat gently until just boiling and the fruit is releasing its juice. Remove from the heat. Transfer to a bowl, allow to cool, then place in the fridge for 1-2 hours.
    2. When the fruit is chilled, strain through a fine sieve and reserve the juice. Gently crush the fruit with a fork, making sure you keep some texture. Add the rose water and mix thoroughly.
    3. Whisk the cream in a bowl until it starts to thicken - it should remain soft, just holding its shape. Stir in the fruit and gently mix to combine, leaving a rippled effect. Scoop into 1 large serving glass and, for a really romantic touch, sprinkle with crystallised rose petals. If you like, drizzle with the reserved juices just before serving.

    Cook's tips

    The rose water is pure extract of rose petals and very strong. Add a drop, then taste as you go if you want to add more.
