    Rosemary and Garlic Salmon Fillets 2

    Serves: 4

    Ingredients

    • 50ml light olive oil
    • 4 fillets of rosemary and garlic marinated salmon (from service counter)
    • 12 small blanched carrots
    • 12 sun-dried tomatoes
    • 12 preserved artichokes
    • 50ml extra virgin olive oil
    • 4tbsp balsamic vinegar

    Method

    1. Heat 50ml light olive oil in a large pan. Add 4 fillets of rosemary and garlic marinated salmon (from the service counter) flesh side down, and cook for a minute or 2 on each side. Bake in a preheated oven 180°C, gas mark 4 for 5 minutes.
    2. Add 12 small blanched carrots, 12 each of sun-dried tomatoes and preserved artichokes, 50ml extra virgin olive oil and 4tbsp balsamic vinegar to a pan and sauté for approximately 2 minutes until warm.
    3. Serve with the salmon.
