    Roti Jala

    These pancakes are made by swirling batter through a cup with funnels in the base. You can make a substitute by piercing holes in the bottom of a paper cup. Alternatively, make flat pancakes

    Makes: 20 - 25


    • 225g plain flour
    • 1 teaspoon salt
    • 1 tablespoon corn oil, plus a little extra for frying
    • 4 eggs
    • 350ml water, or coconut milk


    1. Sieve the flour and salt into a bowl. Add the oil and eggs and beat well. Add the water or coconut milk and mix to a smooth batter.
    2. Lightly oil a medium frying pan and place over a medium-high heat. Use a cup with holes in the base to scoop up the batter. Drizzle into the hot pan with a swirling motion to form a lacy pancake. Fry for a minute or two until the underside is golden brown, then flip and cook briefly on the second side. Gently fold the pancake into four and set aside while you repeat with the remaining batter.
