    Saffrans Pannkaka

    Serves: 8


    • 110g flaked rice
    • 250ml water
    • Pinch of salt
    • 200ml whipping cream
    • 700ml milk
    • 2 pinches of saffron
    • 2 teaspoons honey
    • 50g chopped almonds
    • 50g raisins
    • 1 pinch ground cinnamon
    • 1 pinch ground cardamom
    • 1 teaspoon vanilla sugar
    • 3 medium eggs
    • Butter for greasing
    • To serve
    • Whipped Cream
    • Blackberry preserve


    1. Combine the flaked rice, water and salt and boil for 15 minutes. Add the whipping cream, milk and saffron and boil until soft.
    2. Remove from the heat and add the honey, chopped almonds, almond paste, raisins, spices and sugar. Whisk the eggs and add them to the cooled mixture. Pour into a buttered tray and bake in an oven preheated to 200°C/gas mark 6 for 25-30 minutes. Serve warm with whipped cream and blackberry preserve.
