    Saffron Chicken Skewers

    • Total time: Ready in 30 minutes 30 minutes

    Serves: 2

    Ingredients

    • 200g Total 0% Fat-Free Greek Strained Yogurt
    • 2 large pinches saffron strands
    • 1 crushed garlic clove
    • 1 tsp ground cumin
    • 340g pack Waitrose Free Range Chicken Mini Fillets

    Method

    1. In a bowl, mix together 200g Total 0% Fat-Free Greek Strained Yogurt with 2 large pinches saffron strands, 1 crushed garlic clove and 1 tsp ground cumin.
    2. Add a 340g pack Waitrose Free Range Chicken Mini Fillets and marinate in the fridge for at least 20 minutes or overnight.
    3. Thread the chicken on to skewers (if using wooden ones, soak them in water for 20 minutes beforehand).
    4. Heat a griddle pan over a low heat. Cook the chicken for about 5 minutes on each side or until there is no pink meat and the juices run clear. Serve with a tomato salsa, such as Waitrose Fresh Dip Vine Ripened Tomato Salsa.
