    Salad of Broad Bean and Serrano Ham

    Serves: 2

    Ingredients

    • 2 - 3 tablespoons olive oil
    • 250g (shelled weight) fresh, very small broad beans, blanched
    • 50g serrano ham, cut into small pieces
    • Fresh mint to garnish

    Method

    1. Heat the olive oil in a deep frying pan or wok. When hot, add the broad beans, toss and add the serrano ham.
    2. Cook quickly for about 2 minutes and serve at once with a little mint on top.
