    Salad of Parmesan, Parma Ham and Vine Ripened Tomatoes

    Serves: 4

    Ingredients

    • 100g fresh Parmigiano Reggiano Parmesan
    • 125g bag Waitrose Gourmet Salad
    • 200g chicory, cut into quarters
    • 85g Parma ham cut into thin strips
    • 300g small cherry vine tomatoes, halved
    • 4tbsp balsamic vinegar
    • The dressing
    • 50ml balsamic vinegar
    • 100ml extra virgin olive oil
    • 30ml water
    • Salt to taste
    • sugar to taste

    Method

    1. Cut shavings of Parmesan straight from the block using a vegetable peeler. In a large bowl, mix together the salad leaves, chicory Parmesan and Parma ham. Marinate the tomatoes in the balsamic vinegar.
    2. Combine the salad dressing ingredients together. To serve, spoon the tomatoes around a plate or bowl, toss the salad with the dressing at the very last minute and pile in the centre of the tomatoes. Delicious with grilled fish or cold roast chicken.
